Adjusting Taste

It's a key element for the entire recipe to have the right taste with Azuki soup, a combination of sugar and salt. Adjust especially the amount of salt right to a point where sweetness of soup suddenly hits another level as you add another pinch of salt.

Procedure

To prepare Azuki soup, beat boiled Azuki beans making it running- smooth using an electric mixer.
|
|
|

In a saucepan, bring the Azuki bean paste and water. Boil over medium heat, Stir frequently to mix well. With a skimmer, occasionally skim off froth and scum from the surface.

Add sugar and salt. Boil with medium heat for about 5 minutes. Stir frequently to mix well.

Pre-heat toaster oven to 300F. Cut Mochi into 3.5" square pieces. Set aside.
|
|
|
 |
Bake 2 pieces of Mochi for 8-10 minutes or until being golden brown.
|
|
|
 |
Place 1 piece of Mochi in a bowl. Cover it with the Azuki soup.
