3 pieces cucumber
some ginger
Vinegar sauce
1 1/2 tablespoons brown rice vinegar
5 tablespoons sugar
5 tablespoons Dashi soup
5 tablespoons mirin
5 tablespoons soy sauce

When to bring a special sauce:
Note to bring the prepared sauce to the sliced cucumber right before serving. Otherwise, the cucumber may get too tender and/or color changed.
Recipe

Procedure:
Slice ginger into pieces. Set aside.
Mix brown rice vinegar, sugar, dashi, mirin and soy sace to prepare a special sauce. Set aside.
Slice cucumber into thin pieces. Add 1 1/2 teaspoon of salt to them, and crumple by hands until they get tender. Gently press excess water out.
Bring the prepared sauce.
Finish:
Serve them in small dishes with the sliced ginger on top.
